Coffee Chicken Wings

• 2 pounds chicken wings
• 1 Tbs baking powder
• 1/4 tsp salt
• 1/2 cup maple syrup
• 1/2 cup water
• 1/4 cup white vinegar
• 1 Tbs ground coffee
• 1 tsp unsweetened cocoa powder
• 1/4 tsp salt

• Preheat oven to 200F. Line a large rimmed baking sheet with foil. Set a wire rack on prepared sheet. Spray rack with oil.
• Pat wings very dry with paper towels, then transfer to a large bowl. Sprinkle baking powder and salt over wings. Toss to coat completely. Arrange wings in a single layer on prepared rack. Place wings in center of oven, then increase oven temperature to 400F.
• Bake until golden and crispy, 30 to 40 min. Remove pan from oven and let stand until cool enough to touch, about 5 min.
• Combine maple syrup with water, vinegar, ground coffee, cocoa powder and salt in a small saucepan. Boil, stirring occasionally, until sauce starts to thicken and turn syrupy, 12 to 15 min.
• Toss wings in sauce and serve immediately with any remaining sauce on the side.
